SPECIFICATION

EVAPORATED APPLES

 GENERAL DESCRIPTION: 

Evaporated apples are prepared from sound, properly ripened fruit which has been washed, peeled and cored, sorted, trimmed, cut to the desired size and properly dried to average not more than 22% moisture by weight.   In the case of a “dry cut,” an additional cutting is required following the drying process.  The product is inspected throughout the process to assure a clean, wholesome product which is in complete compliance with the previsions of the Federal Food, Drug and Cosmetic Act.   Product is free of foreign matter with no skin. 

VARIETY:

Fuji and other varieties. 

COLOR:

Sulphured:  Light yellow to white.     
Unsulphured:  Light brown to tan. 

PRESERVATIVES:

Sulphur Dioxide.  Approximately 500-1500 PPM (Custom Sulphur ranges and

Unsulphured  products are available by special order).   

STORAGE RECOMMENDATIONS: 

Evaporated apples can be stored for short periods of time (one month or less) at room

temperatures in a cool, dry atmosphere, but for prolonged periods 45°F or less is required.

(Unsulfured and low sulfured apples require cold storage at 40°F. or less at all times). 

RECONSTITUTION RATIO: 

Although the end usage, process, size and style of cut will ultimately dictate the correct ratio, evaporated apples generally require five (5) parts water by (by weight) to one (1) part apple, to fully reconstitute.
